LizLo Cakes located in Auckland New Zealand formerly known as LizLo Cupcakes from Sydney Australia. Established in 2012 we originally began from my parents small kitchen in Western Sydney.
I remember buying cupcakes for my sister in laws birthday from a large franchise in Sydney and whilst they looked amazing, they were hugely disappointing on the taste front. It’s so important that a product not only looks good but also tastes just as good. This is where it all began. I started baking cupcakes for our family lunches and crafted each flavour in our range through research, trials and plenty of practice.
I started baking at a young age of 12 years old. I drew inspiration from my late Grandfather Dominic Krause who crafted his own signature chocolate cake that became tradition at every family celebration we had. As a little girl I watched him bake this masterpiece without a recipe in sight and all of his measurements were done by the eye. He would bake and my Nana would make a simple chocolate icing and then decorate with a huge variety of mixed lollies. I would watch on as Nana would hand slice banana lollies from the party mix bags into strips and then arrange them to write her happy birthday message. She would then hand place every other lolly to decorate the top and sides of the cake and then transfer it to the same colourful fruit bowl platter that has been in our family almost as long as I have. The cake was perfect every time.
Cakes became a huge part of our business in 2016 when we took on the direction of Polynesian Cakes. I am from a Pacific Island background, so to see our culture and heritage come to life in cake form is very special to me. Our small team have designed and crafted all of our creations ourselves and to see our work put smiles on our customers faces made all the sleepless nights worth it. We shared our passion with many people and families.
An important aspect of our business has always been our support network. My family and friends have always been my greatest support. My grandfather Aleki Lopesi gave me simple and effective advice that I still carry with me to this day. He would sit wth us as we decorated our cakes, he admired our work and you couldn’t wipe the smile off his face. He blessed our business through his prayers daily and encouraged me to be the best I could be.
Both Grandfathers have had such a huge impact on the path that I am on today and I dedicate my journey to them.
